DELICIOUS FOODMutton Rogan Josh
Savor the rich, aromatic flavors of Mutton Rogan Josh with this authentic recipe – tender mutton slow-cooked in a flavorful Kashmiri masala gravy.
Ingredients
1.500 Grams Mutton bone-in
2.2 to 3 tablespoon of ghee
3.1/4 tablespoon asafetida (Hing)
4.1/2 cup curd
5.3/4 tablespoon salt or according to taste
6.1 to 1/1/2 tablespoon Kashmiri red chili powder
7.Spices
1 bay leaf
1 inch cinnamon
3 to 4 cloves
3 green cardamoms
1 black cardamom
2 tablespoon fennel seeds powder
1 tablespoon dried ginger powder
1 tablespoon garam masala powder
Method to prepare Rogan Josh
1.Heat oil or ghee in a pot and add all dry spices (bay leaf, green cardamoms,cinnomon,cloves and black cardamoms).
2.When the spices sizzle in oil, add mutton and sear it for 1 to 2 min on a high flame.
3.Keep the heat on a medium flame and for for 4 to 5 min until the meet is slightly brown in color.
4.Add yogurt to a bowl and the dried spices powder (red chili powder, fennel powder, dried ginger powder and salt) and mix it well together.
5.Once the meat turns light brown in color add some Hing to the oil, turn off the flame and mix the yogurt mixture very gently
6.turn on the heat and cook the mutton for another 4 to 5 min on a medium flame.
7.Put one cup of hot water and cook it on a low flame until the mutton is tender also not forget to stir the gravy every 7 to 8 minutes.
8.Once the mutton becomes tender adjust the consistency and salt if required by adding hot water and salt to taste.
9.Add some coriander at last (Optional) and enjoy the delicious Motton Rogan with rice, roti or paratha.
