Puran (dal filling) ingredients:
Half a cup of chana dal Half a teaspoon of turmeric Half a teaspoon of ghee Three cups of water Half a cup of jaggery One teaspoon of ghee ½ teaspoon powdered cardamom

How to prepare chana dal or puran stuffing: First, soak 1½ cups of chana dal for 1⁄2 hour in a big dish. After the water has been drained, move it to the cooker. Add 3 cups water, ¼ tsp ghee, and ¼ tsp turmeric. Pressure cook over medium heat for three whistles.
Drain the water from the dal.
Pour the dal into a big kadai. Stir with 1½ cups of jaggery. Mash the dal when the jaggery has melted. Mash the dal until it becomes a smooth paste. Another option is to grind the jaggery and dal in the mixi jar. Continue cooking until the mixture becomes thick and solid. Now, heat for a minute, or until the mixture begins to separate the pan, after adding 1 tsp ghee and ½ tsp cardamom powder. The filling will be sticky and challenging to form into a ball if the mixture is undercooked. Move to a platter and let it cool a little. The filling will become hard if it is overcooked. Grease your hands with ghee and form the stuffing into balls. Puran is at last prepared. Set aside.

How to get the outer covering (poli) ready: First, place two cups of wheat in a big basin. First, combine 2 cups of wheat flour, 1 cup of maida, ¼ teaspoon of turmeric, ¼ teaspoon of salt, and 2 tablespoons of oil in a big bowl.
Now begin kneading the dough and add water as needed. Add water in stages while kneading until the dough is soft and smooth. Apply two tablespoons of oil to the dough, cover, and let it rest for at least an hour. Punch and knead the dough once again after an hour. To create a smooth ball, pinch a ball-sized piece of dough.
Pull the dough without any pleats to begin stuffing within. Now, avoid any splits and seal the dough. After dusting the ball with maida, gently flatten it. Now, gently roll the holige without applying much force. Make sure the puran is evenly spread and roll as thinly as you can. Now, cook the puran poli over a medium heat on a heated tawa. When the base is halfway done, turn it over.
Cook thoroughly after spreading the ghee on both sides. Make sure to cook the puran poli evenly by puffing it. Lastly, savor puran poli with milk or ghee.
