Ingredients for Kanda Poha
1.5 cups of thick Poha
One teaspoon of sugar
Half a teaspoon of salt
Half a teaspoon of turmeric
Regarding Kanda Poha:
Two tablespoons of oil
Two tablespoons of peanut
One teaspoon of mustard
One teaspoon of cumin
pinch hing
A couple of curry leaves
Two finely chopped chillies
One inch of finely chopped ginger
One onion, chopped finely
Half a teaspoon of turmeric
Half a teaspoon of salt
Two tablespoons of finely chopped coriander
Half a lemon
Instructions
Put one and a half cups of poha in a large basin. Avoid taking thin poha now, as it becomes fragile as soon as water is added.
Rinse with water and then drain.
Add ½ teaspoon salt, ¼ teaspoon turmeric, and 1 teaspoon sugar.
Let the poha relax for 8 to 10 minutes, or until it softens without becoming sticky or delicate.
Heat two tablespoons of oil in a large kadai and roast two tablespoons of peanuts over low heat.
Add a sprinkle of hing, a few curry leaves, one teaspoon of mustard, and one teaspoon of cumin to the same oil. Make a splash with the tempering.
Now add one onion, one inch of ginger, and two chillies. Saute the onions. Add a little of salt and turmeric as well. Saute a little. Add the soaked poha and mix well.
For three minutes, or until the poha is cooked through, cover and simmer.
Add the fried peanuts, half a lemon, and two tablespoons of coriander. Blend well.
Eventually, use the mixture to make kanda poha for breakfast in the morning.
