Ingredients for the Chicken Shami Kabab Recipe:
500g of chopped, boneless chicken
Half a cup of Bengal gram, or chana dal, steeped for an hour
One onion, coarsely chopped
Two to three chopped green chilies
One tablespoon of garlic-ginger paste
A teaspoon of red chili powder
Half a teaspoon of powdered turmeric
One teaspoon of garam masala
One teaspoon of cumin seeds
Six to eight black peppercorns
Two to three cloves
One little cinnamon stick
Add salt to taste.
Chopped coriander leaves, two tablespoons
Two teaspoons of optionally chopped mint leaves
One egg (for binding)
Oil for shallow cooking
Instructions:
Add the chicken, soaked chana dal, onion, ginger-garlic paste, green chilies, red chili powder, turmeric, cumin seeds, black peppercorns, cloves, cinnamon stick, salt, and dal to a big pot.
Just enough water should be added to cover everything. Cook until the water has evaporated and the chicken is soft. (If there is still excess water, use medium heat to dry it out.)
process the combination: First, process the chicken and dal mixture into a thick, smooth paste. If desired, remove the whole spices, such as cinnamon and cloves.
Combine the herbs: Pour the blend into a bowl. Mix thoroughly after adding the chopped coriander, mint, and garam masala leaves.
Create kababs by gently beating the egg into the mixture to aid in binding.
Form the mixture into tiny oval or round kababs. (You can add a little bread crumb if it is too soft.)
Heat oil in a skillet over medium heat before frying the kababs. The kababs should be shallow-fried until both sides are golden brown.
Serve hot, accompanied by mint chutney.
