Authentic Restaurant-Style Dum Aloo – Best Ever Comfort Food

Dum Aloo – If you are in the mood for an authentic Indian curry which is bursting with flavor and spice – this no spice dum aloo is exactly what you need. This restaurant-style Dum Aloo is not just full of rich North Indian flavors, but it is also an ideal one-pot meal for those cozy nights in or festive dinners.

Whether it's a weekend indulgence or a party or a special occasion – Aloo Matar Paneer is a Universal Favourite and a Comfort/Family Food for everyone. Oh, and uh, did I mention it’s vegan-friendly if you switch out the milk?

Ingredients (Serves 4)

For the baby potatoes:

15–18 baby potatoes

1 tsp turmeric powder

Salt to taste

2 tbsp oil (to shallow fry)

For the curry:

2 tbsp oil or ghee (for extra richness) dataGridViewTextBoxColumn

1 tsp cumin seeds

1 bay leaf

2–3 cloves

1-inch cinnamon stick

1 large onion, finely chopped

1 tsp ginger-garlic paste

2 medium tomatoes (pureed)

1/2 cup curd (whisked), you can use plant-based curd for vegan version

1 tsp kashmiri red chili powder (for nice color)

1/2 tsp garam masala

1/2 tsp coriander powder

Salt to taste

Fresh coriander for garnish

Step 1: Prepare and Parboil the Potatoes

BABY POTATOES · Wash and boil baby potatoes in salted water until 80% done (between 8-10 mins).

Peel them carefully, then stick them with a fork to help the flavors penetrate.

Take some oil in a pan and shallow fry the potatoes until crisp and golden. Set aside.

Step 2 Preparation to Make the Rich Dum Aloo Gravy.

In the same pan, pour oil or ghee. Add cumin seeds, bay leaf, cloves and cinnamon.

Toss in diced onion, and cook till browned. This builds the flavor base.

Add ginger-garlic paste and fry unti brwah smell leaves.

Stir in tomato puree, chili powder and coriander powder. Cook until oil separates.

Turn down the heat, and gradually stir in the beaten yogurt. Keep on stirring to prevent it from curdling.

Add salt and garam masala. The gravy will thicken and the aroma will be divine.

Step 3: Simmer the Potatoes

Carefully, drop the fried baby potatoes into the gravy.

Cover and cook on low heat (“dum”) for 10-12 minutes, so the potatoes are well soaked with the spices.

Sprinkle with fresh coriander chopped and serve.

🍽️ Serving Suggestions

Warm, buttered naan, steamed basmati rice, jeera rice or even simple garlic rice are all great to serve this comfort food classic with. It’s just the thing for a weeknight dinner post, or a festive main course with a place in a plant-based life with the tiniest of tweaks.

Pro Tips for Perfect Dum Aloo    

For color without a lot of heat, go with Kashmiri red chili.
The potatoes are fried to add surface texture and depth.
Yogurt will always curdle if you cook on high heat - always cook on low.
