Ingredients:
Biscoff Crust:
12 sliced Lotus Biscoff
Three tablespoons of melted unsalted butter
🧁Cream Cheese Filling:
1 cup full-fat, softened cream cheese
Half a cup of powdered sugar (to taste)
Half a cup of heavy cream or whipped cream (whipped until stiff peaks form)
Two tablespoons of melted Biscoff spread (for mixing)
One teaspoon of optional vanilla extract
🍯Topped with 2 tablespoons of melted Biscoff spread
Instructions:
1. Form the crust layer. And after Breaking the Lotus Biscoff biscuits. Add the melted filling until the biscuits have a wet, beachy consistency. For the base, add 2 tablespoons to each jar and press down. Sit for a moment.
2. Make the cheesecake. Beat the icing sugar and cream until light and fluffy. Sprinkle with vanilla extract and melted Biscoff. Mix well. Add the whipped cream and gently fold in until light and fluffy.
3. Assemble the baking tins and spoon or pipe the cheesecake filling onto the top.
4. Top each cupcake with Biscoff borders. For extra flavour, place crumbled biscuits on top.
5. Enjoy this delicious homemade cake-style dessert, chilled too!
Advice & Modifications
For a chocolate variant, use Oreo instead of Biscoff.
