Dhaba-Style Egg Curry with Lachha Paratha
A warm dish of egg curry with crunchy lachha paratha tastes great after a long day. Flavorful, spicy, and decadent, this classic combo is a favorite among North Indian dhabas. The crispy, layered texture of the lachha paratha is a wonderful complement to the intensely spicy, creamy egg curry.
This meal brings the flavor of roadside dhabas into your kitchen, whether you are hosting a small party or want to surprise your guests with an Indian supper.
Ingredients for Dhaba Style Egg Curry:
6 boiled eggs (shelled)
Two big onions, chopped finely
Two tomatoes, sliced or mashed
One tablespoon of ginger-garlic paste
Three tsp oil
One teaspoon of cumin seeds
A leaf of bay
A pair of green cardamoms
A cinnamon stick that is one inch
One-half teaspoon of powdered turmeric
One teaspoon of red chilies
One teaspoon of powdered coriander
Garam masala, half a teaspoon
Season with salt.
Leaves of fresh coriander (for garnish)
Water in a cup
Steps:
- Boil and prepare eggs Boil the eggs until hard.
- This is how you make egg curry. Cut them smoothly and peel them.
- Heat 1 teaspoon of oil paint in a fish and fry the eggs until golden brown.
- Remove from the pan and set aside.
- Roast the remaining oil paint in a fish to make the masala base.
- Add the cardamom, cinnamon, cumin seeds and bay leaf. Let them wrinkle.
- Fry the chopped onions until golden brown. Add the garlic gusto paste and poach until the raw smell has gone.
- Add the spices and tomatoes. Cook the pureed tomatoes until the oil paint comes off.
- Now add the swab, coriander, chilli and turmeric.
- Cook, stirring, for two to three minutes.
- Add water to the curry to adjust the thickness as it simmers.
- Poach for five to seven minutes. Gently stir in the fried eggs.
- Cover, add garam masala and poach for five minutes.
- Turn off the heat. Add chopped coriander leaves as a garnish.
Ingredients for a Quick Lachha Paratha Recipe:
Two cups of whole wheat flour
Half a teaspoon of salt
Water (if required)
Oil or ghee (for frying and layering)
Steps:
- Make a soft dough by kneading the flour, water, and salt together. Take a 20-minute break.
- Separate into balls. Apply ghee, roll each out, fold into fan-like pleats, roll into a spiral, and then flatten one more.
- Cook in ghee on a hot tawa till crisp and brown on both sides.
