Matka Kulfi Recipe
This form of matka kulfi is a must-try if you are in the mood for a rich, delicate and traditional Indian cate. Matka kulfi, served in traditional tinting pots, revives old flavours and adds a contemporary touch. Ideal for cool summer fun or festive delicacies.
Ingredients:
1 litre full fat milk,
½ cup condensed milk,
¼ cup sugar (to taste),
½ tablespoon cardamom paste,
8-10 saffron flakes (soaked in 2 tablespoons warm milk),
almonds and chopped pistachios,
2 tablespoons,
½ tablespoon rose water.
Matkas, or tinting pots, are used to set kulfi.
Instructions
On a thick base, bring the milk to a pustule.
On low heat, reduce by half, stirring sometimes to avoid burning.
Add the condensed milk and stir until well combined.
Boil five or seven further times.
Stir in the saffron milk, sugar, and cardamom paste.
Allow it to get thick enough to cover a spoon's back.
Switch off the heat.
Add the diced nuts and rose water.
Allow the admixture to cool kindly before pouring it onto matkas.
Cover and break it after letting it set for at least 6 to 8 hours or overnight.
Garnish with splintered nuts and serve stupefied.
